As we sit in quarantine with I’m sure more cans of black beans in our pantry than we’d like to admit I figured it was time to create a simple vegan and grain free black bean burgers recipe. And that is exactly what we have here. SIMPLICITY at it’s finest.

These vegan black bean burgers have a fun secret ingredient that sub out the need for any breadcrumbs. Say what?? The magic process of blending up Siete Foods tortilla chips yields the best resumblance to a breadcrumb without any of the gluten that comes with it. These tortilla chips are made with cassava flour which makes them grain free, but if you don’t have any on hand or no access to this brand then feel free to sub with regular tortilla chips or gluten free breadcrumbs. Your choice 😉

I’ve noticed a lot of black bean burger recipes out there contain egg, so keeping this as inclusive as possible I omitted the egg and instead, used a flax egg. Ground up flax seeds mixed with warm water work wonders for those that are vegan or just simply can’t eat eggs.

Vegan Black Bean Burgers ready in under 30 minutes. The perfect recipe to make during self quarantine and to use up all those canned black beans.

Ingredients

  • 15.5oz can black beans

  • 1 medium onion, finely diced

  • 1/2 bag siete chips blended into a crumb (to make 1/2 cup)

  • 2 tbsp ground flax + 4 tbsp warm water

  • 1/2 tbsp cumin

  • 1 tsp chili powder

  • 2 cloves garlic (optional)

  • 1 tsp coconut aminos (or gluten free soy sauce)

  • salt and pepper

Directions

  • Rinse and drain black beans. Add to a large bowl, using a hand masher, mash roughly. Leaving some beans in tact
  • Mix together your warm water with ground flax seeds. Stir and let sit until it turns ‘eggy’
  • Saute onions in a frying pan with 1 tbsp oil, until translucent. If using garlic, dice finely and cook with the onions. Once cooked through add to the black beans.
  • Add the ground flax mixture to the black beans along with your spices, coconut aminos and ground up siete chips. Season with salt and pepper to taste.
  • Stir well and transfer mixture onto a large cutting board. Form into 1 large ball. Cut the ball 4 ways, form each one into a patty, ensuring they’re even in size.
  • Cook in a frying pan over a medium heat in a small amount of oil. 4 minutes each side.
  • Gently remove and serve on a bed of lettuce with avocado, mayonnaise, pickles and some mustard.

Notes

  • Once the siete chips are blended into a crumn they should equate 1/2 cup. To yield this amount you will roughly need 1/2 a standard sized bag.
