Raw Superfood Muesli

I am officially addicted to homemade muesli, it’s so easy to make I don’t know why it’s taken me this long to get onto it! This version is raw, nut free and full of so many amazing superfoods making this breakfast option so nutritiously dense you won’t need large of a serving to keep you satisfied. Although second helpings may be necessary purely due to how tasty it is.

The great thing about this recipe is you can really do no wrong. Have mulberries in the pantry? Throw em in. Love a good crunch? Add your favorite raw nuts. Not vegan? Throw in some bee pollen for extra vitamins and minerals. And if you really wanna get fancy, add in a scoop of collagen (obviously no vegan) for some extra protein and gut healing benefits.

But to keep it simple, i’ll stick to the OG and let you decide on the rest.

This muesli can be dressed up with some fresh banana, berries or yogurt and served with your milk of choice

This superfood muesli recipe is full of healthy fats and fiber and can be customized in so many unique ways.

Ingredients

  • 3/4 cup gluten free rolled oats

  • 1/2 cup goji berries

  • 1/4 cup cacao nibs

  • 1/4 cup raw pumpkin seeds

  • 1/4 cup chia seeds

  • 2 heaped tbsp coconut chips

Directions

  • Simply put all your ingredients into a large jar
  • Close the lid and shake until mixed well
  • Serve and Enjoy

Notes

  • Can be kept in a cool dry cupboard for at least 1 month
  • Best eaten 5-10 minutes after water has been added. This allows the oats to soften and the chia seeds to activate.
